Super Greens Muffins by Nutra Organics

A quick and easy breakfast or snack to cure 3:30 itis that is both nourishing and delicious.

Makes 8 serves

3 eggs

2 tbsp Coconut Oil, melted

1/3 cup Coconut Sugar

Pinch Himalayan Salt

1/4 cup Coconut Flour

1/4 tsp baking powder

1/3 cup Coconut Chips, roughly chopped

2 tbsp Super Greens & Reds

Icing: (Optional)

2 tbsp cream cheese

2 dates

½ tsp cinnamon


Preheat oven to 200 degrees.

Blend together all ingredients (except Super Greens & Reds) and mix the batter until there are no lumps. Then swirl in your Super Greens & Reds. Pour the batter into greased muffin tray or paper patty pans or make your own with baking paper. Bake for 15 minutes.

When cooled we topped with softened cream cheese, softened dates and a pinch of cinnamon mixed together and piped on top. Soooo good.
