Acai Berry Semifreddo by Nutra Organics

Semifreddo means Semi frozen. Enjoyed at its best in the summer heat for a Christmas day or boxing day indulgence!

For the Semifreddo:

250g mascarpone cheese

300ml cream (whipped)

100ml double or raw cream for topping

3 tbsp of Acai Berry Blend

100ml Maple Syrup

2 cups of fresh berries: Strawberries (cut into three lengths), blueberries, raspberries

1 vanilla bean (seeds) or 1 tsp of vanilla paste

1 bowl half filled with ice cold water

For the compote jam:

250g frozen mixed berries  

2 tbsp Coconut Sugar

2 tbsp Acai berry blend

1 tbsp water

Heat the maple in a saucepan. Pour into a bowl with the mascarpone. Stir with a whisk until melted/combined. Place the bowl into the iced water bowl and continue whipping until the mascarpone begins to cool. Stir through the whipped cream and vanilla. Combine. Stir in half the berries and gentry ripple in the Acai Berry Blend, ensuring not to completely blend into the mix.

Line a cake tin or loaf pan with 2 layers of glad wrap. Pour in the mix. Freeze for at least 8 hours.

Meanwhile make the compote jam. Place all the berries, coconut sugar, water and Acai Berry Blend into a pot and simmer until the berries break down. Give them a mash and then pass through a sieve (or not). Set aside to cool.

Take the Semifreddo out of the freezer and remove the glad wrap from the tin, tip upside down onto a plate and peel off the glad wrap. Decorate with layers of remaining fresh berries, jam and cream. Enjoy :)
